Yummy!

I love to cook. I really love to cook when I have new recipes to try out. Thanks to Pinterest, I have been trying all kinds of new recipes and most of them are SO yummy! Here are just a few of our favorites right now:

Southwestern Black Bean Salad


Ingredients:

  • 1 15.5 oz can black beans, rinsed and drained
  • 9 oz frozen corn, thawed
  • 1 tomato, chopped
  • 1 small hass avocado, diced
  • 1/4 cup red onion, chopped
  • 1 scallion, chopped
  • 1 lime, juice of
  • 3 tbsp extra virgin olive oil
  • 1 tbsp cilantro
  • salt and fresh pepper
Directions:
Combine beans, corn, tomato, onion, scallion, cilantro, salt and pepper. Mix with lime juice and olive oil. Marinate in the refrigerator 30 minutes. Add avocado before serving.

We ate this on our shredded chicken tacos the other night. I also just eat it as a snack with chips. DELISH!!!


Crack Slaw, an Asian Cole Slaw Recipe

1 bag cole slaw mix (14oz, or just shy of 400 grams of shredded cabbage and carrots, mixed)
5 scallions, sliced
3 tablespoons butter
2 tablespoons sesame seeds
1 cup slivered almonds
1 package ramen noodles (minus the flavor packs)

dressing:
1/2 cup veg oil
1/4 cup sugar.. i would not add all of that at once.. try half then add to taste.. when it’s too sweet it’s not as crack-like
2 tablespoons soy sauce

throw the sesame, almonds, crunched up ramen noodles and into a pan with butter.. cook till golden

let cool… add mixture and scallions to coleslaw..dress and get cracked out.

This salad is so very yummy! I have made it the last two Friday nights with grilled chicken. Stefan and I LOVE this one!!!

Tonight I am making this Taco Pie

Lukella love this one! Luke ate half of this last time. All you do is prepare your ground meat or ground turkey the way you would for tacos. Pour the meat into a frozen pie crust and top with cheese. Follow the baking instructions on the back of the pie crust. I think it is 400 degrees for 10 minutes. Until your crust turns brown and cheese is melted. Slice it up and top off each the way you would for tacos. DELISH!!!

Catching Up

I thought I would do another blog with some more pictures. I just LOVE taking pictures. I can NOT wait until our Verizon contract ends next month...that means buh bye Blackberry and hello iPhone!!! SO excited! People thought I took a lot of pics of my kids...just wait ;)

We have had a nice weekend and we are SO EXCITED that the CARDS are Big East Champs!!! Woohoo!!! It was fun cheering for them and of course, I fell asleep during the game. A 9:00 game is a bit late to be getting started for this momma. Last night we went to church. I am now volunteering twice a month at our Church Cafe and I love love love it! I am a Barista and make all kinds of yummy drinks for people. So much fun! I told Stefan that once Ella is in school full time with Luke, I wouldn't mind being a Pilates Instructor part time and work at the coffee shop near CAL part time. I really do enjoy it that much! Plus, I love meeting and chatting with all the people that come through =)

It was crazy dress day at school this past Thursday. Lukella decided to dress themselves. Looks like jerseys and shorts on top of their pants was crazy to them =)


Look who is going to be in Kindergarten at CAL next year...LUKE!!! He took a test a few months ago and he did GREAT! He is so ready and so excited about going to school! Momma is a little sad...I think Ella will be too!

CAL is putting on the play "Cinderella" right now. We decided to take Lukella on Thursday night. Ella was really excited (I know you can't tell by this pic). Luke wasn't really excited. And Dad wasn't thrilled at all because UofL was playing. Thanks to the man who created a thing called DVR! When we walked in they handed out tiara's to the little girls. Well, Ella has been wearing hers all day everyday since Thursday night. She even falls asleep in it at night!


Last Monday it snowed here in Louisville and it was so pretty! This has got to be the prettiest I have ever seen the city of Louisville. Prettiest snow day. Ever.

Well, after all of that snow it is supposed to be in the 70's and 80's (OMGosh) this week. Looks like we will make some trips to the Zoo and have some picnics. I am still working on trying to get a pool in the backyard. That isn't going so well with the hubs. I seriously will have my beautiful pool in my beautiful backyard...one day....one day ;)

Off to have a fun day Sunday outside. It is going to be a beauty out.

SO behind on blogging...BOO!!!

I can't believe I haven't blogged in FOREVERRR! So sorry! Since October...That is horrible! Well, let's catch up ;) CAL's football team won District! Yeah, District Champs! Stefan was named Coach of the Year in our District! YAY COACH! Now we are ready for Spring football! That will be starting up soon and we can't wait!!!

Luke is signed up to play t-ball with some friends this year and we are so excited. Ella starts gymnastics in a few weeks and she is SO ready! Here are some pictures for those of you who aren't on Facebook...Enjoy =)


This is Coach and I headed to his football banquet. So incredibly proud of him and the wonderful year he had as a first time head football coach. Love him!

DeSales Game

THIS was the game of the year! DeSales had never been beaten in CAL football history. And we were ready to make that happen! I was so super duper excited that my sister and her family were coming in town for this game. They purchased their air horn and hit the road on Thursday afternoon. They arrived Friday around 2 AM! We were all excited to see them that we stayed up chatting with them until 3:30. Well, everyone was up but Ella. Phew!

We woke up Friday and all of us were sooo excited about the big game! But had things to do before kick off. Hope, my sister, thought it would be a great idea to buy some shoe polish and decorate the Coach's car. My sis is brilliant! We headed to Target...got our goods...then headed to CAL. Coach was at BDub's eating some lunch so we had plenty of time to decorate his cute black car. Here are some pics:

After decorating Coach's car we came home and made signs for the game. All of them came out so cute. Luke was so proud of his sign. With our signs and air horn in hand we were ready for some football!!! As I was getting my water and Gatorade ready I noticed how "together" DeSales looked. They had on lots of pink for breast cancer awareness month. Then all of a sudden the team was in a line and they would run, give their Coach five, spin around and run off. Oh my! This is a spiffy team I thought! I was really liking the hand shake thingy they were doing. Anyways, they had some big boys but I had a good feeling about this night. Since Hope and her family were coming to the game we decided to just bring Lukella with us. Craig and Hope's three kids are SO awesome with Lukella! I wasn't worried about my babies getting bored in the stands.

This game was sooooo GOOD!!!! I LOVED having my sis and her family in the stands acting all crazy when no one else was. I LOVED hearing the air horn blow and then receiving a text message saying "awkward" from my sis because the fans were so quiet...but she wasn't ;) I tell ya, us Louisianians don't play. We are loud and we are proud of our football! It was such a FUN game and ended on a GREAT note! CAL 29 DeSales 21! That's right...first time CAL has beaten DeSales...EVER! That's right...A LOT of first's going on at CAL with their first time Head Coach! SO incredibly proud of my hubby and his team!

Sorry I am really behind on my posts. BUT we did win on our first playoff game Friday night! Woohoo! Now DeSales is coming back to us to play again. Should be another fun and exciting game!

Next game blog coming up...Ft. Knox. Hope everyone is doing fabulous! Had a busy day and night yesterday cooking for 12 Senior football players. We had them over to watch the LSU game and eat some jambalaya, chicken fettuccine, cheesy garlic biscuits, salad, chocolate chip pound cake, butterscotch candies and strawberry cobbler. I started on Friday cooking the fettuccine sauce. Then, yesterday, I was in the kitchen ALL day cooking! I was in heaven! I had so much fun! And at the same time realized how hard it would be to be a chef! SO happy I never got serious about going to Culinary School when we lived in Charlotte ;)

Bardstown Game

So sorry I haven't blogged about the last three football games. Life has been crazy busy! I told Stefan the other day that once Monday comes I blink and it is already Friday. I am having around 7 Pilates sessions a week now. Yipppeeee! Lukella are busy with school. On Wed.'s they are busy helping me in the kitchen bake cookies. Then, before I know it it is time for Friday Night Lights!!!

Three weeks ago we played at Bardstown. It was another District game and they were favored to win. I drove myself out there. I had a Coach's wife wanting me to ride with her and her family but I like to drive myself so I can get there early to do the water. I had no clue I was driving myself an hour out into the boonies! It was actually nice to have a hour of peace and quiet all to myself. Ahhhh! But I did have to turn off Adele because my eyes were getting a bit heavy. Bardstown was a country town and those fans loved their football! That's what I'm talkin about! They were favored to win. Imagine that. But we came out strong and hitting them hard and we were the ones that came out with the W! Oh yeah, at the beginning of the game the clock on the score board wasn't working so we never knew how much time was left until half or until the end of the game. Drove me nuts! How convenient for the clock to not work all game but then work fine at half time. Hmmm crazy right ?!? Anyways, this was such an exciting and intense game. Yes, the water girl was yelling like crazy. No, she did not care what people thought about her. Come on people...this is football! Get CRAZY! Final score was 21 - 16. So exciting!!! I was so proud of Coach and his team. And what really made my night was Coach driving me back to Louisville. We had an hour to discuss the game and what our game plan for next week would be. I am one blessed W.G. who gets to do this fun life with this sweet man! I adore this Coach! OK, enough with this sappy stuff. DeSales game coming up next with some crazy cajuns that came to visit :)

Family Pictures


My sister, Hope, and her family came to visit us this past weekend! We had way too much fun! On Saturday before Church we decided to try and have a family photo shoot. It was 3 o'clock. I know...worst time ever to try and have a shoot! BUT it was the only time we could do it and I was determined to get some shots. Well, it turned out to be not only super sunny BUT super windy! Oh my word! I am editing some shots right now and came across these. I can NOT stop laughing. Check out Luke with his dance moves. Please excuse the crazy Momma and her kung fu moves ;) Will be updating the last two games soon. We WON both and we are #1 in District right now! Woohoo!

WE WON

We WON last night! Oh my word...what a GREAT game! The final score was 21-16! We are now 3-0 in District! Will have a blog about the game soon. This morning we are off to the playground while Coach is at practice then watch some more football this afternoon. Hopefully we will be able to catch some of the CARDS game and the Tigers! GO CARDS!!! And I can NOT believe I am saying this but Geaux Tigers!!! ;)



LOVE this pic of Lukella from a while back. They crack me up! Ella is reading a magazine and Luke is playing the Ipad. After football season this is what Coach and I will be doing on Saturday mornings ;) But until then....football football football...and I LOVE it!!!
